Here is a recipe for a super liver lifting salad. Beetroot is a wonderful vegetable for the liver. It is rich in potent phytochemicals and antioxidants, which protect cells from free radical damage. Beetroot also contains betaine, which aids liver function and cellular reproduction, among other chemical processes. Betaine also helps the body to make carnitine, which is involved in turning fat into energy.
1kg of raw, organic, beetroot
2 eating apples
100g baby spinach
150g sunflower seeds
Dressing:
200ml olive oil
3 tbsp balsamic vinegar
2 tbsp agave syrup
- Toast the sunflower seeds in a dry frying pan on a medium heat until lightly brown. Toss or stir regularly to avoid burning
- Wash the beetroot (don’t peel if organic!) and cut the knobbly ends off
- Grate the beetroot (wear gloves if you don’t want pink hands)
- Slice the apple thinly, into bitesize pieces
- Wash & dry the spinach
- Add spinach and apple to the grated beetroot
- Add the toasted sunflower seeds once they have cooled
- Mix up the dressing ingredients in a jam far with a lid and shake well
- Dress the salad and enjoy! Serves 6 small side portions.
