tasty energy bars

Sometimes it's a bit of a struggle to eat healthily. Working long hours, rushing from one task to the next and fighting off the tiredness are realities for many of us. We all know that eating regular healthy meals will help us to stay on top form, but how do we fit it in, among the countless things we need to get done? This is not a lesson in getting your priorities right, this is a helping hand for those days you barely have time to scratch your nose.

These energy bars are for those moments when you need an extra boost, a mid morning snack that won't send your blood sugar levels soaring. If you're really stuck they'll keep you going until you get the late lunch that keeps gettiing later and they are perfect to sustain you if out walking or biking.

There is no sugar, no nasty fake sweeteners and with the high proportion of nuts & seeds they are a pretty good source of protein. The agave syrup is a particular favourite; made from the agave plant it has a wonderfully low glycaemic index and is safe for diabetics.

Ingredients:

1 ½ cups ground almonds
1 ½ cups ground walnuts (or pieces, bashed up small)
¼ cup sesame seeds
½ cup pumpkin seeds
½ cup raisins
½ cup apricots
1 cup dried blueberries
1 cup agave syrup (available in your local health food shop)
1 tsp cinnamon, nutmeg or cardamon

    • Preheat oven to 135 degrees C
    • Mix all ingredients thoroughly in a large bowl, the mix should be quite sticky
    • Using wet fingers, press the mix into a 7 x 11” oiled & lined baking tray
    • Bake for 30 mins -1 hour depending on preferred degree of chewiness
    • Cool in the tray and cut into pieces
    • Store in fridge in an airtight container or freeze in portions until you need them.
