Wholegrain Spelt Bread
Us Irish like our bread. We have it as toast in the morning, for lunch as a sandwich and maybe even with our dinner in the evening. There are so many different breads on the supermarket shelves that you would think our needs would be catered to, but so many are tasteless and nasty, full of sugar, salt and weird preservatives that, honestly, I don't consider them bread at all. read more here...
Quinoa Salmon Burgers
Getting oily fish into my weekly diet isn't always easy. I love to cook and yet, cooking fish is where I often fall flat on my face. Somehow I end up with overcooked rubbery lumps of tasteless mush. This recipe is really easy...read more here...
Millet Tabbouleh
Millet is a fantastic alternative to wheat and cous cous. It is a wonderful source of magnesium, zinc, potassium & phosphorous as well as being alkaline forming, so helps to combat the acid forming processes that occur naturally in our bodies! It's sometimes hard to know what to eat while on a detox. For some, a detox is an all out fast, for others it's just a matter of cutting out tea, coffe, alcohol and sugar. Spelt Pastry
Spelt is an ancient grain which has not been farmed as intensively as wheat and therefore remains much as it was when humans first started growing it. It also contains less gluten than wheat so is easier to digest. Wholegrain spelt flour contains a broader range of nutrients in comparison to it's more inbred cousins, including manganese, B3, phosphorous and magnesium. If you'd like to experiment with spelt, why not start here?
Guilt (and cramp) free pancakes!
I know for sure, a number of people who felt they couldn't partake in pancake Tuesday. Why? They can't stomach dairy and sometimes wheat is just too much for them to handle. There's a solution though...a world of alternative milks and a glorious selection of wheat free flour, like spelt. If you can't touch gluten, there's tapioca, buckwheat, rice and potato flour. Pancake Tuesday is back in the diary and even all year round! Check out a gorgeous wheat & dairy free recipe here...
This curry is one I've adapted from the wonderful new Cornucopia cookbook. I find the recipe there a little longwinded and complicated, but it is in essence a beautiful balance of flavour & heartiness. I love it when I feel the need to nourish my body and still feel well fed! More here...
This soup is a twist on the cold weather soup recipe. Lentils add wonderful protein, which combined with carrots, sweet potato and coconut milk make this soup a meal in itself...More here...
This winter soup is deliciously spicy and warming. Whether you use squash or sweet potato, they are both excellent sources of beta carotene...More here..
